The Hunter and the Dog

This is not a staged demonstration. You will follow a professional hunter and his trained dogs into the private woodlands surrounding the estate. You will see how the dogs work the ground, using their scent to locate truffles buried among the roots of oak and poplar trees. The hunter will explain the different varieties found throughout the year, from the prized white truffle in autumn to the black summer truffle.

From the Forest to the Table

The experience is as much about the walk and the local ecology as it is about the find. You will learn how to properly harvest a truffle once a dog has located it, ensuring the soil is preserved for the next season. It is a quiet, rhythmic process that ends with a tasting of the day’s find back at the estate. We handle the logistics and the rubber boots if needed, so you can focus on the pace of the hunt and the work of the dogs.
